Diana's Household Diaries " Secret Summer Surprise "

I've decided to be generous and share my "Secret Summer Dessert" recipe with all of you.
This is one of my most requested Summertime desserts and I've made it four or five times over the last few weeks. I lost count.
Then I quit making it because, well, 
I just got tired of making it.

It's not very big so it goes fast. My photo of it doesn't do it justice but I'm just not talented like that. You know who you are. The Blogger's that make every dish look so beautiful. I've tried that.
It didn't work for me. Could be because I hate cooking so much that I just do it and serve it up!

This is so good, especially on a hot summer day. 

Lemon Torte


12 Graham Cracker Squares, crushed 
3 Large eggs, separated
1 Tablespoon Finely grated lemon peel
1/4 Cup fresh squeezed Lemon Juice
1/4 Cup Sugar
1/8 Teaspoon salt
1/4 Cup Sugar
1 Cup Whipped Cream (Whipped) Or I use
2 Cups thawed Cool Whip

Line a 9 x 5 inch loaf pan with half of the Graham Cracker crumbs

In a medium saucepan, combine egg yolks, (Reserve whites in a medium glass or metal bowl, chill) lemon peel, lemon juice, 1/4 cup of sugar and salt. Mix well.

Cook over medium heat until mixture just begins to bubble, stirring constantly. It will be the consistency of pudding. Remove from heat and let cool.

Beat egg whites in chilled bowl until frothy. Add 1/4 cup of sugar and beat until stiff peaks form.

Fold in cooled lemon mixture and Cool Whip.
Pour into pan and top with remaining Graham Cracker crumbs. Freeze for at least four hours. You will want it to be frozen solid.
For longer storage cover with foil but it usually doesn't last very long!

This tastes like a delicious sweet, lemony ice cream. You will get compliments on this dessert!

sounds divine...problem...there's only me and I'd eat it all...over the past year I've gained 10 pounds...my BP has increased and so has my bad cholesterol level...so I'll look but no eating! your photo looks fine to me...the proof is in the eating and if you and yours love it...then there you go!!! :0

Oh Diana; is there any way to integrate some sweetened condensed milk into this thing? It looks so good, but surely we can put some more calories in! :D

Yum yum - and sounds so easy maybe even I can make it. Grandson Jack likes anything lemon (will just eat lemon slices if we have some).

I'll have to try this for Labor Day when the family comes over. Thank you! Ray loves lemon so I know at least he'll appreciate the effort!
It sounds similar to something one of my friends made recently when she came here for a visit, and it was delicious!

I read back on a few posts, but I know I have more I have to catch up on. I have to go throw in a load of wash though, and the baby is giving Kate trouble and she has work tomorrow so I'll give her a hand after that. I'll have to try again another time, I think I missed some 'chore' posts that I've been very interested in reading!

I wanted to stop by for a skinny minute. I've been away for a while. Mama is very ill. Please, pray for Mama. She thanks me often for the lovely doilies you made for her.
It is so hard for me to see her as sick as she is. She has congestive heart failure. I'm crying as I type this to you...but I wanted to let you know.
I did want to come by and let you know that I'm thinking of you, and that I miss you.
